- Don't reduce it too far — it thickens a lot more once cold.
Substitutions
Red wine vinegar only works with 60 g sugar and gives a noticeably fruitier result. Light balsamic works 1:1 but produces a pale glaze.
Storage
4 weeks refrigerated; loosen an over-thickened glaze with a little warm water.
