- 1 red bell pepper
- 1 onion
- 3 garlic cloves
- oil2 tbsp
- brown sugar50 g
- apple cider vinegar50 ml
- mustard1 tbsp
- soy sauce1 tbsp
- smoked paprika1 tsp
- salt1/2 tsp
- pepper
Method
- Preheat the oven to 220 °C top/bottom heat.
- Halve the tomatoes, roughly chop the pepper and onion, and roast with garlic and oil on a tray for 30-35 minutes until dark edges form.
- Blend everything with the remaining ingredients until smooth and simmer uncovered for 15-20 minutes.
- For a fully smooth sauce, pass it through a sieve.
Substitutions
Out of tomato season, drain 800 g canned tomatoes and roast with the onion and pepper for 40 minutes. Smoked paprika can be replaced with 1 tsp regular paprika plus a splash more soy sauce.

For the premium version, making it yourself is worth it mostly for the roasted flavor — if you're still short on time, a good store-bought BBQ sauce refined with 1 tbsp extra smoked paprika is a fast compromise.
Storage
7 days refrigerated or portioned and frozen for 3 months.
