Ingredients
- 1 liter rich beef broth
- 1 onion
- 3 garlic cloves
- tomato paste2 tbsp
- sweet paprika2 tbsp
- chili flakes1/2-1 tsp
- cumin1 tsp
- oregano1 tsp
- 1 bay leaf
- apple cider vinegar1 tbsp
- oil2 tbsp
Method
- Roast the onion well, add garlic and tomato paste and roast for 1 more minute.
- Stir in the spices briefly, add the broth and bay leaf and simmer gently for 30 minutes.
- Remove the bay leaf, blend smooth and season with vinegar and salt.
- For the classic dip flavor, stir in a little pan juice from the birria beef.
Substitutions
Replace beef broth with chicken or vegetable broth. Cumin can be left out; the broth will taste less Mexican. Without chili, use more paprika.
Storage
3 days refrigerated or frozen for 3 months.
