Ingredients

  • 1 liter rich beef broth
  • 1 onion
  • 3 garlic cloves
  • tomato paste2 tbsp
  • sweet paprika2 tbsp
  • chili flakes1/2-1 tsp
  • cumin1 tsp
  • oregano1 tsp
  • 1 bay leaf
  • apple cider vinegar1 tbsp
  • oil2 tbsp

Method

  1. Roast the onion well, add garlic and tomato paste and roast for 1 more minute.
  2. Stir in the spices briefly, add the broth and bay leaf and simmer gently for 30 minutes.
  3. Remove the bay leaf, blend smooth and season with vinegar and salt.
  4. For the classic dip flavor, stir in a little pan juice from the birria beef.

Substitutions

Replace beef broth with chicken or vegetable broth. Cumin can be left out; the broth will taste less Mexican. Without chili, use more paprika.

Storage

3 days refrigerated or frozen for 3 months.
