Method
- Melt the butter, stir in the flour for 1 minute.
- Add the milk gradually and simmer gently for 3 minutes.
- Turn off the heat, stir in the cheese in batches and season with mustard and paprika.
- Don't let it boil again after adding the cheese.
Substitutions
Replace cheddar 1:1 with gouda or a mix of gouda and alpine cheese. Cornstarch instead of flour: whisk 18 g with cold milk; the butter can then be skipped.
Common Mistakes
If the sauce turns grainy, take it off the heat and stir in 1-2 tbsp cold milk.
Storage
3 days refrigerated; reheat slowly with a splash of milk.
