Ingredients

  • boneless chicken thigh or thinly sliced beef700 g
  • yogurt150 g
  • oil2 tbsp
  • lemon juice1 tbsp
  • 2 garlic cloves
  • paprika2 tsp
  • cumin1 tsp
  • oregano1 tsp
  • salt1 tsp
  • pepper

Method

  1. Slice the meat very thin, mix with the remaining ingredients and chill for at least 1 hour.
  2. Scrape off excess marinade.
  3. Fry in batches in a very hot, large pan for 5-7 minutes until strong brown edges form.
  4. For chicken, cook fully to at least 75 °C internal temperature; for beef, cooked through with no pink center, about 71 °C, is enough.

Substitutions

Replace thigh with chicken breast, then cook only to 75 °C. Cumin can be left out. Replace yogurt with 2 tbsp oil plus 1 tbsp more lemon juice.

Storage

Cooked, 3 days refrigerated.
