  2. Let it sit for 5 minutes until an elastic gel forms, then knead directly into the rest of the dough ingredients.
  3. Don't add it dry to an already-firm dough, or it will clump.

Substitutions

Grind whole psyllium husks finely first and use 12 g instead of 10 g. Alternatively, let 15 g finely ground chia seeds swell in 150 ml water for 10 minutes. Chia binds less elastically and darkens the dough.

Dosage
