Ingredients
- dried porcini mushrooms30 g
- hot water300 ml
- butter1 tbsp
- 1 small shallot or 1/2 onion
- salt
- pepper
Method
- Pour hot, not boiling, water over the mushrooms and soak for 20 minutes.
- Lift them out, squeeze lightly and roughly chop.
- Strain the soaking water through a coffee filter or paper towel.
- Sweat the onion in butter, fry the mushrooms for 3-4 minutes and deglaze with a little of the filtered mushroom water.
Substitutions
30 g dried mushrooms are roughly equivalent in flavor to 250-300 g fresh brown mushrooms, but stronger. With fresh mushrooms, skip the soaking water and add broth instead.
Storage
Prepared, 3 days refrigerated. Store dried mushrooms in a dark, airtight container.
