Ingredients

  • beef shoulder or chuck1.5 kg
  • salt2 tsp
  • oil2 tbsp
  • 1 onion
  • 4 garlic cloves
  • tomato paste2 tbsp
  • paprika2 tbsp
  • cumin1 tsp
  • oregano1 tsp
  • chili1/2 tsp
  • beef broth750 ml
  • 1 bay leaf
  • apple cider vinegar2 tbsp

Method

  1. Cut the meat into large chunks, salt it and sear thoroughly on all sides. Remove.
  2. Roast the onion, then add garlic, tomato paste and spices and roast briefly.
  3. Deglaze with broth, add the meat and bay leaf, cover and braise at 160 °C top/bottom heat for 3-3.5 hours.
  4. It's ready when a fork slides in without resistance.
  5. Shred, mix with the defatted braising liquid and add the vinegar.

Substitutions

Replace beef shoulder with shank or eye round. Without cumin, use more paprika and oregano. In a slow cooker: 8 hours on LOW.

Storage

Cool leftovers quickly; 3 days refrigerated or frozen for 3 months.
