Ingredients
- beef shoulder or chuck1.5 kg
- salt2 tsp
- oil2 tbsp
- 1 onion
- 4 garlic cloves
- tomato paste2 tbsp
- paprika2 tbsp
- cumin1 tsp
- oregano1 tsp
- chili1/2 tsp
- beef broth750 ml
- 1 bay leaf
- apple cider vinegar2 tbsp
Method
- Cut the meat into large chunks, salt it and sear thoroughly on all sides. Remove.
- Roast the onion, then add garlic, tomato paste and spices and roast briefly.
- Deglaze with broth, add the meat and bay leaf, cover and braise at 160 °C top/bottom heat for 3-3.5 hours.
- It's ready when a fork slides in without resistance.
- Shred, mix with the defatted braising liquid and add the vinegar.
Substitutions
Replace beef shoulder with shank or eye round. Without cumin, use more paprika and oregano. In a slow cooker: 8 hours on LOW.
Storage
Cool leftovers quickly; 3 days refrigerated or frozen for 3 months.
