  • chili flakes1-2 tsp
  • apple cider vinegar1 tsp
  • salt1 pinch

Method

  1. Warm the honey with the chili over the lowest heat for 5 minutes, but don't let it boil.
  2. Take it off the heat, stir in the vinegar and salt, and let it steep for 15 minutes.
  3. Strain for smooth honey, or leave the flakes in for more heat.

Substitutions

Replace chili flakes with 1/4-1/2 tsp cayenne. Maple syrup works 1:1 but is thinner and needs refrigeration.

Storage

With dry chili flakes, 2 months stored in a dark place; with fresh chili, refrigerate and use within a week.
