Method

  1. Halve the onions and slice them evenly thin.
  2. Fry in a wide pan with oil, butter and salt over medium-low heat for 35-45 minutes.
  3. Stir every few minutes; add 1 tbsp water if they start sticking.
  4. At the end, optionally reduce in the sugar and balsamic for 2 minutes.

Substitutions

Replace butter with more oil. Replace balsamic with apple cider vinegar plus a pinch of sugar. The sugar isn't necessary — time creates the sweetness.

Storage

5 days refrigerated or frozen for 3 months.
