- buttermilk400 ml
- salt2 tsp
- flour250 g
- cornstarch50 g
- paprika2 tsp
- garlic powder1 tsp
- pepper
- 1 liter rapeseed oil for frying
Method
- Chill the chicken in buttermilk with 1 tsp salt for at least 4 hours.
- Mix the flour, cornstarch and spices; drizzle in 3 tbsp of the marinade and rub into small flakes.
- Press the meat firmly into the coating.
- Deep-fry at 170 °C for 10-15 minutes depending on size, until the crust is golden brown and the inside reaches at least 75 °C. Drain on a rack.
Substitutions
Replace buttermilk with 400 ml milk plus 1 tbsp lemon juice. Replace cornstarch with the same amount of flour; the crust will be slightly less crispy.
Safety Note
Handle raw chicken separately from other food; never leave the frying oil unattended. Refrigerate leftovers for up to 2 days and re-crisp in the oven.
