Method

  1. Preheat the oven to 150 °C top/bottom heat.
  2. Brush the nori very thinly with oil, sprinkle with sesame seeds and a little salt, and roast for 3-5 minutes.
  3. Once the sheets are dry and crisp, remove them.
  4. Let them cool, then break or crumble finely.

Substitutions

Nori can't be replaced flavor-for-flavor. For a savory topping, mix 2 tbsp crushed potato chips with 1 tsp sesame seeds and a small pinch of salt; this replaces crunch but not the ocean aroma. In savory sauces, 1/2 tsp soy sauce per sheet of nori can add some umami.

3 days airtight; moisture makes nori go soft.
