Ingredients

  • 1 cucumber
  • water150 ml
  • light vinegar150 ml
  • sugar25 g
  • salt10 g
  • mustard seeds1 tsp
  • 1/2 red onion
  • a little dill

Method

  1. Slice the cucumber thin and layer it in a clean jar with the onion and dill.
  2. Bring the water, vinegar, sugar, salt and mustard seeds to a boil and pour it over hot.
  3. Let it cool, then chill for at least 1 hour; they taste even better the next day.

Substitutions

Apple, wine or white vinegar all work as long as they have about 5% acidity. Sugar can be replaced with honey. Mustard seeds and dill are optional.

Storage

2 weeks refrigerated; this is not a shelf-stable, unrefrigerated preserve.
