Ingredients
- 1 cucumber
- water150 ml
- light vinegar150 ml
- sugar25 g
- salt10 g
- mustard seeds1 tsp
- 1/2 red onion
- a little dill
Method
- Slice the cucumber thin and layer it in a clean jar with the onion and dill.
- Bring the water, vinegar, sugar, salt and mustard seeds to a boil and pour it over hot.
- Let it cool, then chill for at least 1 hour; they taste even better the next day.
Substitutions
Apple, wine or white vinegar all work as long as they have about 5% acidity. Sugar can be replaced with honey. Mustard seeds and dill are optional.
Storage
2 weeks refrigerated; this is not a shelf-stable, unrefrigerated preserve.
