Ingredients
- mild olive or rapeseed oil150 ml
- dried porcini mushrooms10 g
- 1 small sprig thyme
- salt1 pinch
Method
- Break the mushrooms up roughly.
- Warm with the oil and thyme at about 70 °C for 15 minutes; the oil must not fry.
- Let it cool, steep for 2 hours and strain through a coffee filter. Use it by the drop.
Substitutions
Store-bought truffle oil is used 1:1, but dosed carefully. Without porcini, browned mushrooms add aroma: finely chop 100 g, fry them hard, and season the finished dish with them directly; don't try to make a shelf-stable oil from this.
Note
This is a strong mushroom aroma oil, not real truffle oil.
Storage
Cleanly filtered, 7 days refrigerated.
