Ingredients
- Bread flour or Tipo 00180g
- Skyr or thick Greek yogurt170g
- Baking powder6g
- Salt5g
- Olive oil10g
- Optional: grated parmesan10g
Method
- Mix flour, baking powder and salt in a bowl.
- Add skyr and olive oil. Mix until a soft dough forms — about 2 minutes by hand.
- Rest for 10 minutes. Do not skip this — the baking powder needs time to activate.
- Roll or press into a thin base on baking paper.
- Bake at 230–250°C for 6–8 minutes until set and slightly browned at the edges.
- Add toppings. Bake again until the cheese melts and the edges are properly crisp.
