Why this works
Oats give structure, cottage cheese adds protein and moisture, and egg helps the base set. It is more protein flatbread than classic dough, but it bakes into a reliable weeknight base.
Ingredients
- 100g oats or oat flour
- 150g cottage cheese
- 1 egg
- 1/2 tsp baking powder
- 1/2 tsp salt
- Optional: garlic powder
- Optional: oregano
Method
- Blend oats, cottage cheese, egg, baking powder and salt until smooth.
- Rest for 5 minutes so the oats thicken.
- Spread thinly on baking paper.
- Bake at 220°C for 12–15 minutes.
- Add toppings and bake again until hot.
