Why this works

The hot part and the fresh part stay completely separate. The base gets baked first โ€” crisp, golden, done. Then it rests for one minute. Then the salmon, cucumber and nori go on cold. This is why the salmon stays silky instead of dried out, the cucumber stays crunchy instead of limp, and the whole thing tastes clean instead of cooked-to-death. Wasabi mayo is a drizzle, not a sauce.

Ingredients

  • Pizza dough ball250โ€“280g
  • Cream cheese or mild white sauce60g
  • Low-moisture mozzarella70g
  • Smoked salmon or cooked shrimp70g
  • Cucumber ribbons40g
  • Nori sheet, cut into thin strips1
  • Sesame seeds1 tsp
  • Wasabi mayo (optional)small drizzle
  • Soy-honey drizzle (optional)1 tsp

Method

  1. Preheat the oven with a steel or stone as hot as possible.
  2. Stretch the dough into a thin round.
  3. Spread a very thin layer of cream cheese or white sauce.
  4. Add mozzarella evenly.
  5. Bake until the base is crisp and golden and the cheese is lightly colored.
  6. Rest for 1 minute.
  7. Add smoked salmon or cooked shrimp, cucumber ribbons and nori strips.
  8. Sprinkle sesame seeds.
  9. Finish with a tiny drizzle of wasabi mayo.
