Warum das funktioniert
The hot part and the frisch part stay completely separate. Der Boden gets baked first — crisp, golden, done. Then it rests for one minute. Then the Lachs, Gurke and nori go on cold. This is why the Lachs stays silky instead of dried out, the Gurke stays crunchy instead of limp, and the whole thing tastes clean instead of cooked-to-death. Wasabi mayo is a drizzle, not a sauce.

- Pizzateig-Kugel250–280g
- Creme Käse or mild white sauce60g
- schnittfeste Mozzarella70g
- Smoked Lachs or cooked Garnelen70g
- Gurke ribbons40g
- Nori sheet, cut into thin strips1
- Sesam seeds1 tsp
- Wasabi mayo (optional)small drizzle
- Soja-Honig drizzle (optional)1 tsp
Zubereitung
- Preheat the oven with a steel or stone as hot as possible.
- Stretch the dough into a thin round.
- Spread a very thin layer of Creme Käse or white sauce.
- Gib mozzarella evenly.
- Backen until the base is crisp and golden and the Käse is lightly colored.
- Rest for 1 minute.
- Gib smoked Lachs or cooked Garnelen, Gurke ribbons and nori strips.
- Sprinkle Sesam seeds.
- Zum Schluss a tiny drizzle of Wasabi mayo.
