Method

  1. Melt the butter, stir in the flour and cook for 90 seconds without browning.
  2. Whisk in cold milk in four additions.
  3. Bring to a boil while stirring and simmer gently for 4-5 minutes. Season.

Substitutions

Replace butter 1:1 with oil or margarine. For a gluten-free sauce, dissolve 30 g cornstarch in cold milk and bring to a boil without a roux. Milk can be replaced with unsweetened oat drink.

Storage

3 days refrigerated; press plastic wrap directly onto the surface.
