Thai Peanut Chicken Pizza

Peanut sauce on pizza sounds like a dare. It works when the sauce is thin, the chicken is cooked, and lime shows up before things get too cozy.

Why this works

The peanut sauce brings fat and sweetness, so the rest of the pizza needs freshness and acid. Cooked chicken adds substance, mozzarella keeps the slice pizza-like, and cucumber, herbs and lime finish the job after baking.

Ingredients

  • 1 pizza dough ball, 250–280g
  • 50g thin peanut sauce
  • 70g low-moisture mozzarella
  • 90g cooked chicken, shredded
  • 20g red onion, thinly sliced
  • 30g cucumber ribbons, after baking
  • Fresh cilantro or basil
  • Lime wedge
  • Optional: chili crisp

Method

  1. Preheat the oven with a steel or stone.
  2. Stretch the dough thinly.
  3. Spread a very thin layer of peanut sauce.
  4. Add mozzarella, cooked chicken and red onion.
  5. Bake until the crust is browned and the cheese melts.
  6. Add cucumber ribbons and herbs after baking.
  7. Finish with lime and optional chili crisp.
