This is Thai-inspired fusion, not a claim of traditional Thai cooking. Peanut butter and coconut milk form a thick sauce; ginger, garlic, tamari, honey and lime keep it aromatic, salty, sweet and sharp. Chicken is fully cooked before topping. Ingredients

  • gluten-free tamari soy sauce25 g (0.88 oz)
  • mild liquid honey20 g (0.71 oz)

Exact method

  1. 1. Preheat using the loaded-pizza table below. Whisk peanut butter, coconut milk, tamari, honey, 15 g lime juice, garlic and ginger over low heat for 2–3 minutes until smooth and thick; do not boil hard.
  2. 2. Toss fully cooked chicken with 80 g warm peanut sauce. Reserve 35 g sauce for finishing and leave the rest for the pizza base.
  3. 3. Soak onion in ice water for 10 minutes and dry. Shave cucumber away from its seed core and press ribbons between clean towels. Chop peanuts.
  4. 4. Open the 300 g dough to 32 cm with a 1.5–2 cm rim. Move to a lightly dusted peel and confirm it slides.
  5. 5. Spread the base portion of peanut sauce, add mozzarella, sauced chicken and dry onion in an even layer.
  6. 6. Bake with the matching loaded setup below; on steel allow 7–10 minutes and rotate once. Pull when underside browns, sauce bubbles and chicken is steaming.
  7. 7. Rest 60 seconds on a rack. Add cucumber, coriander, chopped peanuts, remaining 20 g lime juice, reserved peanut sauce and all 30 g chili crisp in small drops.
  8. 8. Cut into eight narrow slices and serve immediately, distributing fresh toppings across each portion.

Bake it with the oven you have

A baking steel is useful, not mandatory. If you do not own one, turn a heavy uncoated metal sheet upside down and preheat it fully; the flat hot back becomes the launch surface. A stone or pizza oven also works when its floor temperature is matched to the topping load.

How to know it is ready

  • Peanut sauce stays creamy and thick without an oil lake.
  • Chicken is steaming but remains moist.
  • Cucumber and peanuts stay crisp.
  • Lime and chili crisp read freshly above the warm ginger-garlic base.

Troubleshooting

  • Split sauce: use low heat, whisk continuously and avoid hard boiling.
  • Wet center: make sauce thick, dry cucumber and use the loaded profile.
  • Dry chicken: coat fully cooked moist meat with sauce before topping.
  • Heavy sweetness: use full tamari and lime and reserve chili crisp for the finish.

How to adapt the base recipe

  • For tofu, replace chicken with 300 g pressed, browned firm tofu and classify soy as already present.
  • For more heat, increase chili crisp to 45 g only after checking sesame, soy and sulphite labels.
  • For no dairy, replace mozzarella with 120 g tested plant-based melt and review its soy or nut allergens.

Storage and food safety

Serve immediately. Refrigerate within 2 hours for up to 2 days. Remove cucumber and coriander, reheat chicken and pizza to 74°C / 165°F, then add fresh cold toppings.
