Why this works
The peanut sauce brings fat and sweetness, so the rest of the pizza needs freshness and acid. Cooked chicken adds substance, mozzarella keeps the slice pizza-like, and cucumber, herbs and lime finish the job after baking.
Ingredients
- 1 pizza dough ball, 250–280g
- 50g thin peanut sauce
- 70g low-moisture mozzarella
- 90g cooked chicken, shredded
- 20g red onion, thinly sliced
- 30g cucumber ribbons, after baking
- Fresh cilantro or basil
- Lime wedge
- Optional: chili crisp
Method
- Preheat the oven with a steel or stone.
- Stretch the dough thinly.
- Spread a very thin layer of peanut sauce.
- Add mozzarella, cooked chicken and red onion.
- Bake until the crust is browned and the cheese melts.
- Add cucumber ribbons and herbs after baking.
- Finish with lime and optional chili crisp.
