Why this works

Hoisin replaces tomato sauce, but only in a thin layer. Duck is already cooked, so it heats without drying out. Cucumber and spring onion go on after baking for the fresh crunch that keeps the sweetness in check.

Ingredients

  • 1 pizza dough ball, 250–280g
  • 1½ tbsp hoisin sauce
  • 70g low-moisture mozzarella
  • 90g cooked duck, shredded
  • 40g cucumber matchsticks, after baking
  • 1 spring onion, sliced
  • 1 tsp sesame seeds
  • Optional: chili oil

Method

  1. Preheat the oven strongly.
  2. Stretch the dough into a thin base.
  3. Spread a very thin layer of hoisin sauce.
  4. Add mozzarella and cooked shredded duck.
  5. Bake until the crust is crisp and the cheese melts.
  6. Add cucumber and spring onion after baking.
  7. Finish with sesame seeds and optional chili oil.
