Ingredients

  • Pizza dough250g
  • Fresh ricotta150g
  • Baby spinach150g
  • Mozzarella90g
  • Garlic (sliced)2 cloves
  • Nutmegpinch
  • Lemon zest½ lemon
  • Olive oil15ml

Method

  1. Wilt spinach with garlic in olive oil. Drain excess water—critical step.
  2. Preheat oven to 265°C.
  3. Stretch dough. Dot ricotta across the base (no tomato sauce).
  4. Add mozzarella, then spinach.
  5. Season with nutmeg. Bake 11–13 minutes.
  6. Finish with lemon zest—it brightens the whole pizza.
