Ingredients
- Pizza dough250g
- Fresh ricotta150g
- Baby spinach150g
- Mozzarella90g
- Garlic (sliced)2 cloves
- Nutmegpinch
- Lemon zest½ lemon
- Olive oil15ml
Method
- Wilt spinach with garlic in olive oil. Drain excess water—critical step.
- Preheat oven to 265°C.
- Stretch dough. Dot ricotta across the base (no tomato sauce).
- Add mozzarella, then spinach.
- Season with nutmeg. Bake 11–13 minutes.
- Finish with lemon zest—it brightens the whole pizza.
