Why this works
The sweet base gets crisp before any cream touches it. Mascarpone, espresso and cocoa go on after baking, so the pizza tastes like tiramisu instead of hot dairy confusion.
Ingredients
- 1 smaller pizza dough ball, 220–250g
- 1 tsp melted butter
- 2 tsp sugar
- 80g mascarpone
- 40g whipped cream
- 1 tsp powdered sugar
- 1 tsp strong espresso, cooled
- Cocoa powder
- Shaved dark chocolate
- Optional: crushed ladyfinger biscuit
Method
- Stretch the dough slightly smaller than a normal pizza.
- Brush with melted butter and sprinkle with sugar.
- Bake the plain base until golden and crisp.
- Let the base cool for a few minutes.
- Mix mascarpone, whipped cream, powdered sugar and cooled espresso.
- Spread the cream over the cooled base.
- Dust with cocoa powder.
- Finish with shaved chocolate and optional crushed biscuit.
