  • paprika2 tbsp
  • garlic powder1 tsp
  • pepper1 tsp
  • mustard1 tsp
  • apple juice200 ml
  • BBQ sauce150 ml

Method

  1. Rub the meat with mustard, mix the dry spices and press them on firmly.
  2. Cook covered in a roasting pan with apple juice at 140 °C top/bottom heat until it reaches 92-95 °C internal temperature and the meat falls apart easily; this usually takes 6-8 hours.
  3. Rest for 30 minutes, shred, and mix with a little pan juice and BBQ sauce.

Substitutions

Replace apple juice with broth plus 1 tbsp sugar. Pork shoulder works the same way. Don't use a lean cut like tenderloin.

Storage

3 days refrigerated or frozen for 3 months.
