Method

  1. Roughly chop the salami and blend with all the ingredients into a spreadable, slightly coarse paste.
  2. For warm dishes, melt briefly in a pan; as a spread, let it sit for 30 minutes to develop flavor.

Substitutions

Replace salami with cooked, crumbled sausage meat and let it cool completely. For a meat-free version, use 150 g sun-dried tomatoes, 80 g cream cheese and 1 tsp smoked paprika. This isn't traditional fermented 'nduja, but it delivers a similarly spicy, spreadable effect.
