Exact method
- 1. Place a steel or stone on the lower-middle rack and preheat at maximum heat for 60 minutes.
- 2. Heat oil in a wide skillet over medium-high heat. Add beef in one layer and leave it untouched for 2 minutes; break it into 1–2 cm crumbles and brown for another 3–4 minutes.
- 3. Add cumin, paprika, garlic and 2 g salt. Cook 60 seconds, then verify the beef reaches 71°C / 160°F. Spread it on a plate so steam escapes instead of soaking the pizza.
- 4. Drain corn and jalapeño separately and blot both dry. Keep guacamole and sour cream refrigerated; prepare cilantro and lime wedges.
- 5. Open the 280 g dough to 30 cm with a 1.5–2 cm rim. Move to a lightly dusted peel and confirm it slides.
- 6. Spread all 110 g tomato sauce, then add cheddar, cooled beef, corn and jalapeño evenly. Finish the hot topping with the remaining 1 g salt.
- 7. Bake at 250–300°C / 482–572°F for 5–8 minutes, rotating once, until the underside browns and cheddar bubbles around the beef.
- 8. Rest on a rack for 60 seconds. Add guacamole and sour cream in 10–12 alternating small spoonfuls rather than two heavy center piles.
- 9. Scatter cilantro, squeeze half the lime over the pizza and serve the remaining wedges alongside. Cut into eight smaller slices so the loaded topping stays supported.

Troubleshooting
- Greasy center: brown beef in a wide pan and drain only excess free fat before cooling.
- Wet topping: blot corn and jalapeño and keep cold finishes off until after baking.
- Bland meat: season the beef itself with the measured spice and salt; surface seasoning cannot replace it.
- Topping slides: rest 60 seconds, use small cold dollops and cut eight narrow slices.
How to adapt the base recipe
- For a saucier 30 cm pizza, increase thick tomato to 130 g only if corn, jalapeño and beef are completely free of loose liquid.
- For a meat-free version, replace raw beef with 220 g drained black beans and 120 g sautéed mushrooms; this changes the protein and allergen profile.
- For 35 cm, use a 340 g dough ball, 145 g tomato, 170 g cheddar, 260 g raw beef, 90 g corn, 45 g jalapeño, 130 g guacamole and 90 g sour cream.
Storage and food safety
Serve promptly. Refrigerate within 2 hours for up to 2 days. Store guacamole, sour cream and remaining pizza separately where possible; reheat the pizza until steaming, then add fresh cold finishes.
