Ingredients
- finely grated zest of 1 untreated lemon
- mild paprika2 tsp
- salt1/2 tsp
- 1 small pinch black pepper
Method
- Rub everything together with your fingers and sprinkle immediately over salads, onions, meat or dips.
- For more tartness, add a few drops of lemon juice right before serving.
Substitutions
Real sumac is used in the same amount. In a finished dish, 1 tsp sumac can usually be replaced with 1 tsp lemon juice plus a pinch of paprika. Don't add lemon juice ahead of time in dry spice blends.
Storage
Only 2 days refrigerated because of the fresh zest. Dried sumac keeps airtight for several months.
