Ingredients

  • 2 ripe avocados
  • 1 small tomato without watery seeds
  • 1/4 red onion
  • lemon or lime juice1-2 tbsp
  • chopped parsley or cilantro1 tbsp
  • salt
  • optional chili

Method

  1. Mash the avocado roughly, leaving some chunks.
  2. Finely dice the tomato and onion and fold in with the juice, herbs and salt.
  3. Taste and cover right away.

Substitutions

Replace lime 1:1 with lemon, and cilantro with parsley. A still-firm avocado can't be sensibly softened by force; it's better to ripen it for 1-2 days in a paper bag with an apple.

Storage

1 day refrigerated, with plastic wrap pressed directly onto the surface.
