Zutaten
- Bread flour (strong)450g
- Whole flaxseeds30g
- Sesam seeds25g
- Sunflower seeds (chopped)25g
- Cold water300ml
- frisch yeast3g
- feines Meersalz11g
- Olivenöl20ml
Zubereitung
- Toast Sesam and sunflower seeds in a dry pan for 3 minutes until fragrant. Let cool.
- Dissolve yeast in a small amount of the cold water.
- Combine flour and salt. Gib yeast water and remaining cold water. Mix to a rough dough.
- Knead for 5 minutes. Gib Olivenöl, flaxseeds, Sesam, and sunflower seeds.
- Knead for another 7–8 minutes until seeds are evenly distributed and dough is smooth.
- Form into a ball, cover, and refrigerate for 24–48 hours for best flavor.
- Remove 2 hours vor dem Backen. Divide and shape into balls. Rest covered.
- Stretch gently—seeds make this dough slightly less extensible, so be patient.
- Backen at 260°C on a hot stone or steel for 9–12 minutes.
