Roasted bell peppers, zucchini, eggplant, caramelized onions, and olives. A proper celebration of vegetables.
Ingredients
- Pizza dough250g
- Crushed tomatoes90g
- Mozzarella110g
- Red & yellow peppers (strips)150g
- Zucchini (sliced)1 medium
- Eggplant (cubed)½
- Caramelized onions80g
- Kalamata olives40g
- Fresh basilhandful
Method
- Roast peppers, zucchini, and eggplant at 220°C for 15 minutes with olive oil and salt.
- Preheat pizza oven to 265°C.
- Stretch dough. Spread tomato sauce. Add mozzarella.
- Top generously with roasted vegetables, caramelized onions, olives.
- Bake 12–14 minutes. Finish with fresh basil.
