Why this formula works

Buffalo flavor needs enough sauce to coat chicken and still read across the whole pizza. Butter rounds 150 g hot sauce while vinegar and garlic sharpen it. Only two-thirds of the Buffalo mixture bakes; the rest, plus cold ranch and celery, returns after the rack rest. That gives juicy chicken, vivid heat and crunch instead of one orange, soggy layer.

Ingredients

  • mature room-temperature pizza dough ball300 g (10.6 oz)
  • fully cooked chicken breast or thigh, torn into 2 cm pieces300 g (10.6 oz)
  • cayenne-style hot sauce, divided150 g (5.3 oz)
  • unsalted butter30 g (1.06 oz)
  • low-moisture mozzarella, coarsely grated130 g (4.6 oz)
  • firm blue cheese, crumbled and divided90 g (3.17 oz)
  • thick chilled ranch dressing containing milk, egg and mustard100 g (3.5 oz)
  • crisp celery stalks, cut into very thin crescents100 g (3.5 oz)
  • fresh chives, finely sliced15 g (0.53 oz)
  • apple cider vinegar10 g (0.35 oz)
  • garlic powder2 g (0.07 oz)

Exact method

  1. 1. Preheat with the loaded-pizza table below. Warm hot sauce, butter, vinegar and garlic just until the butter melts; do not boil. Reserve 50 g of the finished Buffalo sauce.
  2. 2. Toss fully cooked chicken with the remaining Buffalo sauce. Let stand 5 minutes, then drain only free sauce back into the bowl.
  3. 3. Slice celery paper-thin and hold it in ice water for 10 minutes. Drain and dry completely. Crumble blue cheese and grate mozzarella.
  4. 4. Open the 300 g dough to 32 cm with a 1.5–2 cm rim. Move to a lightly dusted peel and confirm it slides.
  5. 5. Spread the drained Buffalo sauce from the bowl, add mozzarella, chicken and 60 g blue cheese, keeping the center evenly loaded.
  6. 6. Bake using the loaded setup below; on steel allow 7–10 minutes and rotate once. Pull when the underside is brown, chicken is steaming and cheese bubbles.
  7. 7. Rest 60 seconds on a rack. Add cold celery, remaining 30 g blue cheese, all 100 g ranch in thin lines and reserved 50 g Buffalo sauce.
  8. 8. Finish with chives and cut into eight narrow slices while celery is still crisp.

Bake it with the oven you have

A baking steel is useful, not mandatory. If you do not own one, turn a heavy uncoated metal sheet upside down and preheat it fully; the flat hot back becomes the launch surface. A stone or pizza oven also works when its floor temperature is matched to the topping load.

Recipe-specific order: Celery, ranch, chives and reserved buffalo sauce are post-bake finishes; keep celery cold and crisp.

How to know it is ready

  • Chicken is steaming hot but still moist.
  • Buffalo sauce coats rather than pooling under the cheese.
  • Cold celery snaps and blue cheese remains distinct.
  • Ranch and reserved hot sauce form separate bright lines.

Troubleshooting

  • Wet center: drain only free sauce from coated chicken and use the loaded oven profile.
  • Dry chicken: start fully cooked but moist and do not preheat it separately.
  • Muddy heat: reserve 50 g Buffalo sauce for after baking.
  • No crunch: slice celery thinly, ice it and dry it completely.

How to adapt the base recipe

  • For boneless-wing texture, use 300 g prepared crispy chicken and check gluten, egg and milk allergens.
  • For milder heat, replace 50 g hot sauce with 50 g thick tomato but keep vinegar and post-bake ranch.
  • For 35 cm, use 340 g dough, 380 g chicken, 190 g hot sauce, 165 g mozzarella and 120 g blue cheese.

Storage and food safety

Serve promptly. Refrigerate within 2 hours for up to 2 days. Remove celery and loose ranch, reheat pizza and chicken to 74°C / 165°F, then add fresh celery and dressing.
