Why this works
Buffalo sauce brings acid and heat, blue cheese brings funk, mozzarella holds everything together, and celery after baking gives the crunch that wings usually get from the side plate.
Ingredients
- 1 pizza dough ball, 250–280g
- 60g tomato sauce or light white sauce
- 80g low-moisture mozzarella
- 90g cooked chicken
- 1 tbsp buffalo sauce
- 25g blue cheese, crumbled
- 20g celery, thinly sliced after baking
- Optional: ranch drizzle
- Optional: chives
Method
- Preheat the oven as hot as possible.
- Toss cooked chicken lightly with buffalo sauce.
- Stretch the dough and spread a thin sauce layer.
- Add mozzarella, buffalo chicken and blue cheese.
- Bake until the crust is crisp and the cheese bubbles.
- Finish with celery, optional ranch and chives.
