  • Bread flour300g
  • Semolina flour50g
  • Water230ml
  • Instant yeast5g
  • Salt9g
  • Sugar5g
  • Olive oil20ml
  • Low-moisture mozzarella (grated)200g
  • Tomato sauce (cooked, seasoned)120ml

Method

  1. Make dough with bread flour, semolina, yeast, salt, sugar, water, oil. Knead 10 min.
  2. Cold ferment 24h. Room temp 2h before baking.
  3. Stretch to a large (35–40cm) thin round.
  4. Top with tomato sauce, then generous mozzarella.
  5. Bake at 260°C 13–16 minutes on lowest rack.
  6. NY pizza should have some char on the bottom. Fold your slice—if it holds, it's correct.
