Why this works
Vibrant green pesto base, cherry tomatoes, burrata, toasted pine nuts, and extra basil. The greenest, most aromatic pizza you'll ever eat.
Ingredients
- Pizza dough250g
- Basil pesto (homemade ideally)90g
- Mozzarella100g
- Cherry tomatoes (halved)120g
- Fresh burrata1 (125g)
- Pine nuts (toasted)25g
- Fresh basillarge handful
- Olive oil15ml
- Lemon zest1 lemon
Method
- Toast pine nuts in a dry pan until golden. Set aside.
- Preheat oven to 265°C.
- Stretch dough. Spread pesto generously.
- Add mozzarella, cherry tomatoes.
- Bake 11–13 minutes.
- Place burrata on center, scatter pine nuts, add loads of fresh basil.
- Finish with lemon zest and olive oil drizzle.
