Ingredients
- Pizza dough250g
- Basil pesto80g
- Mozzarella100g
- Zucchini (shaved into ribbons)2 medium
- Cherry tomatoes (halved)100g
- Pine nuts20g
- Fresh basilhandful
- Lemon½
Method
- Preheat oven to 265°C.
- Stretch dough. Spread pesto as base.
- Add mozzarella and shaved zucchini ribbons (use a peeler).
- Add cherry tomatoes and pine nuts.
- Bake 10–12 minutes.
- Finish with fresh basil, a squeeze of lemon, and a drizzle of olive oil.
