Ingredients

  • Bread flour or Tipo 00500g
  • Water325g
  • Salt12g
  • Fresh yeast2g
  • Olive oil (optional)10g

Method

  1. Mix flour and water. Rest for 20 minutes (autolyse).
  2. Add yeast and salt. Knead until smooth — 10 minutes by hand.
  3. Rest at room temperature for 1–2 hours until slightly risen.
  4. Refrigerate for 24–48 hours. Cold fermentation builds flavor.
  5. Remove from fridge, divide into balls. Rest at room temperature for 1 hour.
  6. Stretch and bake as hot as possible.
