Warum das funktioniert

Fries are mostly water and starch. Put raw fries on Pizzateig and they release steam, soften the base and create something nobody asked for. Pre-bake them first — they arrive on the pizza already crisp and stay that way in the oven's second pass. Käse holds the whole thing together. Knoblauch sauce goes on nach dem Backen so it does not make everything wet.

  • Pizzateig-Kugel250–280g
  • White sauce or Tomatensauce60g
  • schnittfeste Mozzarella80g
  • Oven fries, pre-baked until almost crisp100g
  • Cheddar, grated30g
  • Jalapeños or rote Zwiebel20g
  • Knoblauch sauce, nach dem Backen (optional)1 tbsp
  • frisch Petersilie (optional)small handful

Zubereitung

  1. Pre-bake the fries at 220°C until nearly crisp — about 15–18 minutes. They should be golden but not fully done.
  2. Preheat the oven as hot as possible with a steel or stone.
  3. Stretch the dough into a thin round.
  4. Spread a thin layer of sauce — thinner than usual.
  5. Gib mozzarella, the pre-baked fries, cheddar and jalapeños.
  6. Backen until the crust is browned and the fries are fully crisp.
  7. Pull the pizza. Gib Knoblauch sauce and Petersilie.
