Ingredients

  • Pizza dough250g
  • Crème fraîche70ml
  • Mozzarella90g
  • Gorgonzola dolce50g
  • Fresh or dried figs (halved)4–5
  • Prosciutto di Parma70g
  • Fresh rocketlarge handful
  • Balsamic glaze20ml
  • Toasted walnuts25g

Method

  1. Preheat oven to 270°C.
  2. Stretch dough. Spread crème fraîche. Add mozzarella and dots of gorgonzola.
  3. Place fig halves cut-side up.
  4. Bake 12–13 minutes.
  5. Remove: immediately drape prosciutto, pile rocket, scatter walnuts.
  6. Drizzle balsamic glaze dramatically. Serve within 2 minutes.
