  • Pizza dough250g
  • Mozzarella (fior di latte)80g
  • Gorgonzola dolce60g
  • Taleggio70g
  • Parmigiano-Reggiano (grated)30g
  • Heavy cream30ml
  • Fresh thymepinch
  • Honey to finish1 tsp

Method

  1. Preheat oven to 275°C.
  2. Stretch dough. Drizzle cream over base—no tomato sauce.
  3. Distribute all four cheeses: mozzarella first, then dots of gorgonzola and Taleggio, finish with Parmigiano.
  4. Bake 11–13 minutes until cheeses bubble and merge.
  5. Drizzle with honey and scatter fresh thyme. The honey-gorgonzola combination is legendary.
